Today we had a dessert pot luck at work. Last minute Matt and I decided we would go so the race was on to find something to make. We knew it was a competition and I didn’t have time to go for the pretty award. I ran to my friend Google and I couldn’t find much I could make in an adult easy bake or that I didn’t think someone would win. So I ran through the things I could make and I make a sopapilla cheesecake that most people love. The minute I suggested Matt was totally in and off we went to the store. I wanted to do a fall twist so using what I have made before and a few ideas online with pumpkin this is my “kinda” recipe.
This recipe won “best taste” at our party and we even won a gift card. Thanks UMUC. It isn’t pretty but I promise it is SO GOOD and super sweet.
CAKE
2 pkgs pillsbury crescent seamless dough sheet (regular crescents would work too)
2 pkg cream cheese
1 can pure pumpkin
1 cup sugar
2 t Pumpkin spice
Preheat oven 350. 9×13 pan. Pam the pan or spray non stick. put 1 package of the dough down. Blend cream cheese, pumpkin, sugar, pumpkin spice. Spread mixture on top of dough. Put last layer of dough sheet on top of mixture. Add topping 1 before baking.
Topping 1
1/2 C butter
1 cup sugar
2 T cinnamon
Melt butter. Spread on top of dough. Mix together cinnamon and sugar. Put on top of butter. Put pan into oven. Bake for 45 minutes. (remember I have an easy bake so check the times because I am not 100% sure) You want it to be brown on top and all the butter to bake in.
Maple Glaze
2 T Maple syrup
2 t Maple flavor
2 T butter
3 T milk
Powdered sugar ( I just added till it was to a “Frosting” consistency.
Actually everything for the glaze I just poured in a bowl without measuring so everything is approximate. Hopefully you are frosting savy and can make something similar. Add to top when cake has cooled down a bit. Cut into squares. Serve it up and enjoy.
I am really bad at doing this recipe thing huh??????
So when I got home, I got this e-mail that said we got “best taste” by A LANDSLIDE. The cute turkeys you see in the pic won best presentation. I might be excited because I totally made this recipe with some inspiration of course. All I could think about is my mom and how much I wish I could give her a piece this weekend.
So mommy if you read this PLEASE try this recipe and share with the family to have a little me at home.
Makes me miss my family for sure but today I got a little home and it couldn’t have been more perfect. My aunt Connie from Texas sent this to me. Everyone knows I am a Kansas girl but I LOVE my Texas and I left a piece of my heart there when I left. There is a saying:
You only hate the road when you are missing home.
Today is one of those days. I guess because I feel so much joy and so much to be thankful for and I don’t have my family here to share it with. Getting Connie’s package gave me a little home. It is Merry Texmas at our place 🙂 Thanks Connie for the amazing package and all the love.
Since Thanksgiving is tomorrow I wanted to say HAPPY THANKSGIVING and remind everyone:
