Pork Chop Fajitas (Salad) with Guacamole

Today for lunch we made pork chop fajitas with homemade Guacamole.

Pork Chops:

2 Pork chops (you can marinade)

Bake in oven at 425 for 20-25 mins. Cut into strips.

Vegetables:

Different color peppersĀ (we used 4 colors but only 1/2 of each so 2 peppers total) different colors cut into strips

1/2 Onion

3 T olive oil

Saute together on low/med heat.

Guacamole:

2 Avocados

1/2 onion

1 Tomato

1/2 packet of Guacamole mix

1/4 chopped cilantro

3 T Lime juice

Salt to taste

Smash avocados and mix together. Let sit in fridge for at least 1 hour.

 

We didn’t use tortillas which I guess makes it more like a salad?

We layered the sauteed vegetables, cut up port chop, homemade guacamole, light sour cream.
