So of course Matt and I have been trying to find healthier ways to eat the foods we love. When I found this recipe, I was like:
You want me to blend this stuff and expect me to like it like I do pudding???? You mean avocados don’t just go on salad and sandwiches? Are you nuts?
Ok Yes. Yes. YES!!!
I was just as skeptical as you are now. I promise, if you make this, you won’t be disappointed. Try this and report back to me what you think.
Ingredients I used:
2 sm ripe Avocados
1 Lg ripe banana
1/2 cup Cacao powder (or unsweetened cocoa)
1/2 cup peanut butter (I used 100% natural crunchy but can use creamy)
1/2 cup honey (also agave, date paste or maple syrup would work)
1/4 cup almond milk (I used unsweetened vanilla flavored)
2 Tablespoons Flaxseed (I put this in so many things now but not necessary)
(UPDATE 10/12: I made another batch and added an extra medium banana and used creamy unsalted peanut butter. I actually liked this more because it wasn’t so dense. This recipe is flexible and forgiving so please adjust to your own preferences).
Mix everything together. I used my food processor Ninja with the dough blades. You can use a mixer. I have fallen in love with my blender/food processor and we use this item about 3 times a day on average. Protein shakes, fruit, chop spinach or onions. Seriously, I am addicted to using this thing.
Here is our results with a few crushed peanuts on top.
FRICKEN AMAZING. I am telling you, if you don’t give this a shot for whatever reason you make up in your head, you are missing out.
It is rich so a little goes a long way. Ohh the possibilities……….
You can also whip up coconut milk and use as a cream on top, you can drizzle peanut butter, add raspberries, and so much more to add to it. I will say it is better cold so refrigerate it and can be kept for a few days but because of the avocado, it is probably best fresh. Also, I think it would be amazing to layer with cream and I am so excited at the possibility and the flexibility of this recipe.
Anyone have any other recipes I should try with weird ingredients that if you took to a party, no one else would guess what is in it?
