Since we are in Japan, on Sunday mornings we watch football. Football is made around burgers, pizza, beer etc… I wanted to figure out how to make things that were a bit healthier but still have that “football” food feel. What I came up with was a Turkey Buffalo Bean Chili with Fries. I don’t claim that this is health food, just that it is healthier alternative to what we normally would eat.
Remember, if you want something healthier yet, just cut out the fries and sour cream. This chili is great alone.
1 lb ground turkey (or chicken)
1 bag baby carrots
1 T Chili powder
1 can northern beans (drained & rinsed)
1 can navy beans (drained & rinsed)
1 can refried beans
26 oz chicken broth
1/4 cup Franks Hot Sauce (add to your taste)
Brown turkey. Chop onion and carrots then add to turkey and saute for 5 mins over med heat. Add remaining ingredients to mixture. Simmer till desired thickness. The can of refried beans will give the chili the thickness texture that makes this chili so good.
3 T Olive oil
2 t ground garlic (or use garlic powder)
Fresh grated Parmesan
Preheat oven to 425. Cut potato into thin strips. Add garlic to olive oil. Put aluminum foil on pan and rub oil over the foil. Put the potatoes on foil. Bake for 30-45 mins till lightly brown turning 2-3 times to evenly cook. (mine took 45 mins because I have the small counter top oven so just keep an eye on them) Add grated Parmesan and return to oven for 5 mins or to desired crunchiness. Take out of oven and lightly sprinkle with salt.
I put the chili on the fries with light sour cream and some franks on top.
