I posted a blog about an avocado pudding and asked for other recipes where you wouldn’t know what was in it. Black bean brownies were a suggestion from a friend. While I didn’t make them the way she suggested because it called for a pre-made brownie mix that had lots of sugar in it. I wanted something a bit healthier so I searched the web. I couldn’t find exactly what I wanted so using a few recipes this is what I came up with.
Black Bean Brownies
1 can black beans (drained, rinsed)
1 1/2 c oatmeal
3/4 c chocolate chips
1/3 c honey
1/4 c coconut oil (or applesauce)
2 T Cacao powder
2 t vanilla
1 t baking powder
dash salt
walnuts (optional)
Preheat oven to 350. Put everything in food processor (except nuts). Mix till everything is blended together. Spray a 8×8 or 9×9 pan, spread mix into pan. Add nuts if desired. Bake 30 mins (or until done, I have easy bake adult oven so it is hard for me to judge the correct length).
